Have you tried making Brussels sprouts in a pan instead of roasting them? I usually get lazy (aka hungry) waiting for the oven to preheat, so I thought I’d try making them in a pan instead of the oven for once.
The recipe I used is for crispy Brussels sprouts with Sriracha Aioli from Minimalist Baker. Their pictures definitely look a lot better than mine, so check that and the full recipe out.
I will note that the aioli isn’t technically real aioli, but the sauce you’re making is still pretty tasty. I used the mayonnaise option instead of hummus.
Now for the Brussels sprouts themselves, definitely make sure you do a thin layer and a few batches if necessary so they get golden and crispy. I used too many at once (again laziness/hunger). Grated Parmesan on top is a definite must!
